Baked Lobster & Sautéed Rock Shrimp
in a Buttery Wine Sauce
Ingredients
4 uncooked baby lobster tails, shelled but leave the tails on
1 Cup of Cabernet Sauvignon
1/2 Cup unsalted butter, cut into cubes
1/2 Pint of whipping cream
dash of paprika
1 Tablespoon garlic, chopped
1 Tablespoon shallots, chopped
1 Tablespoon olive oil
salt & pepper to taste
lemon wedges for garnish
Preparation time: 15 min.
Cooking time: 30-35 min.
Makes 2 entrełe servings
Directions:
1. Put lobster and shrimp shells in a saucepan with 1 cup water and
bring to a boil for 5 minutes, or until the shells turn bright
orange. Strain and reserve the liquid as seafood stock for the
buttery wine sauce.
2. Preheat the oven to 350 F. Heat the oil in a saucepan over medium-high heat. Add the shallots and garlic and cook for 3 minutes, or until soft and translucent. Add the wine, bring to a boil and reduce by half, about 10 minutes. Then stir in the cream and cup of seafood stock. Gradually whisk in the butter a piece at a time and simmer for another 5 minutes, or until the mixture has thickened enough to coat the back of a spoon. Add the rock shrimp and cook for 3 more minutes. Season the sauce with salt and freshly ground black pepper and set aside. Cover and keep warm.
3. Brush the lobster meat with melted butter, season lightly with paprika, then transfer to a baking sheet or shallow roasting pan greased with non-stick cooking spray. Bake the lobster for 10 minutes or until the meat is firm.
4. Transfer to a serving plate. Spoon the buttery wine sauce around the bottom of the plate. Garnish with lemon wedges.
Chef recommendation: Serve with steamed vegetables and jasmine rice sprinkled with toasted sesame seeds.
